  Zucchini Joe's Special Recipe

This is a variation on the Joe's Special recipe that uses spinach.

1 pound hamburger
1 onion, finely diced
1 small clove garlic, minced
4 - 5 small zucchini, sliced
4 eggs, stirred together
1/4 pound mushrooms, sliced
Salt and oregano
Grated Parmesan cheese

Brown the meat and onion in a large skillet, stirring to break it up. Add zucchini, garlic, and mushrooms. Cook briefly. Add salt and oregano to taste. Add eggs. Cook over low heat, stirring gently until done. Serve topped with grated Parmesan cheese.

Go ahead, use spinach instead of the zucchini if you want. Or some of each.

At the rate we're going it will be a long time before I have any zucchini from my garden to experiment with, but when the first ones are finally ready (maybe as late as September) I'll have decided which recipe to use.

Just letting you know that I've made this twice now, both times without the mushrooms, of course. I used zucchini and summer squash in the first one...fabulous! I used zucchini again in the second one, but added small strips of green bell pepper and some small slices/bits of onion...came out sweeter and very good. (I mentioned this recipe to a friend of mine who loves to be creative...she said it sounds like it would be good to give it a try with zucchini, some (but not a lot) of chopped tomato (meat, not pulp), and sliced black olives. I might give it a try.

Just letting you know that I came back to this post to copy down the recipe. It sounds a lot like the sort of thing I like to do with eggs. Almost don't need a recipe, just knowing the ingredients and substituting or adding different things will give quite an interesting variety of options based on this recipe. I don't eat mushrooms, but I can see that there is no reason why the dish won't be good without them. My printer has been broken for ages, so I had to flag this...when I realized the situation would remain the same for an undetermined amount of time, I decided to revisit all the flagged items to see what I might be able to do with them...this is one I saved so I could print out the recipe. I've just written it down instead.

Well, let me know what you do with it, and what you think. I have a big database of recipes on my computer in Filemaker and never print anything out, just copy them onto the backs of envelopes to use in the kitchen.

Thanks. I wish I was one of those people who cleans house compulsively when stressed, but my reaction is to read cookbooks and maybe try some new recipes. And go to auctions.

We eat a lot of meat -- maybe I'll try it with ground turkey. I have all of the ingredients. I know what they all are. Sounds promising.

Well, season it up. Years ago I went to a restaurant in the Clearwater, FL area that had Joe's Special (with spinach) on the breakfast menu.

Ooooooo, not being a hamburger fan, I might substitute sweet Italian sausage, maybe not a pound, for the hamburger....

A pound of meat seems like a lot with all those eggs, doesn't it? The title of the post sounds like there is a person named Zucchini Joe. With a pound of burger it could be called Beefy Joe's Special Zucchini Fry and then it'd sound like it was about a Chippendale dancer and the zucchini could be... well.
